Chef Mary's Pesto-
1 bunch of basil (just leaves, the stems make it too fiberous)
1/2 c olive oil
2 garlic cloves minced
1 tbsp grated parmesan cheese
light squeeze of lemon juice (about 1 tbsp)
1/2 tbsp toasted pine nuts
Add it all to a blender and puree. Add more olive oil if it is too thick.
