What I Cooked Today... Roasted Peppers and Garlic

Roasted Peppers and Garlic

  1. 2 tbsp chopped parsley
  2. 3 garlic cloves chopped
  3. 2 Red Bell Peppers (roasted, peeled, and thinly sliced)
  4. ¼ cup good olive oil
  5. Salt and Pepper to taste

Mix all ingredients and let it marinate for an hour. Serve with an antipasto plate.
